Made in just one skillet, this Mediterranean chicken recipe comes together in less than 30 minutes. It’s packed with bright, garlicky seared chicken, briny olives, creamy feta, juicy tomatoes, and fresh parsley. ingredients
4 boneless, skinless chicken breasts
2tablespoons minced garlic or garlic paste
Kosher salt (to taste)
Black pepper (to taste)
1tablespoon dried oregano (divided)
2tablespoons extra virgin olive oil
1/2cup dry white wine (substitute chicken broth if avoiding alcohol)
1 large lemon, juiced
1/2cup chicken broth
1 medium red onion, finely chopped
4 small tomatoes, diced (about 1 1/2 cups)
1/4cup sliced green olives (Castelvetrano or Spanish green; Kalamata may be substituted)
1handful fresh parsley, chopped (stems removed)
crumbled feta cheese (optional)

Prep the chickenPat the chicken breasts dry with paper towels. Make three shallow slits on each side of the chicken breast to help the garlic penetrate.

Season the chickenRub the minced garlic all over the chicken, pushing some into the slits. Season both sides with salt, pepper, and half of the dried oregano.

Sear the chickenIn a large cast iron skillet, heat the olive oil over medium-high heat. Once shimmering, add the chicken and sear on both sides until golden brown, about 3–4 minutes per side.

Braise the chickenAdd the white wine and let reduce by half, about 2–3 minutes. Stir in the lemon juice and chicken broth. Sprinkle the remaining oregano on top. Reduce heat to medium, cover with a lid or foil, and cook for 6 minutes per side, or until internal temperature reaches 165°F (74°C).

Finish and serveUncover the skillet and top with red onion, diced tomatoes, and olives. Cover again and cook for 3 more minutes to soften the vegetables. Remove from heat, sprinkle with fresh parsley and crumbled feta (if using), and let rest 5 minutes before serving.
